Good morning and happy Easter Sunday to all of you! One of my favorite things to do for Easter is to put baskets together for my kiddos. Every year, I think "oh this year I might just buy those pre-made baskets," but then, I see some cute things and buy those and some more cute things and buy those, and before I know it, I have more than I can fit in their basket! This year we are trying to reduce our sugar, so their candy was a chocolate bunny and Hershey's kisses. They seemed happy with that. Maybe next year no sugar at all? Probably not, they are kids!

I think they turned out really cute, and the kids commented on them, too. So they must have made an impression. :-)
We are really changing our eating habits lately, trying to reduce sugar and grains, more veggies, etc. So no ham this year, I decided to make another of our favorite meals, blackened salmon, curried rice and asparagus. With some almond flour cupcakes for dessert. (I'm thinking about starting a food blog about all of this!) I think it will go well, and it's a quick meal to fix, so I won't be exhausted. Not too many leftovers, though, that's the trade-off!
